Sandwiches and Saturday
Some of my best sandwiches are just thrown together with whatever spread and veggies I have in the fridge. I usually opt for an open-faced sandwich because I think they look so fresh and appetizing.
They're a little bit messier to eat but I think that makes them more delicious.
This one is toasted rye bread with leftover peanut sauce on the bottom, baked tofu, sprouts, srirracha and topped with lots of fresh cilantro.
It was really yummy and was easy to throw together with leftover ingredients that were in the fridge.
