Blueberry Pancakes and Beauty in the Details


When I think blue food the first, and pretty much only thing to pop into my mind is blueberries!!! I throw them into smoothies and oatmeal but I like them best in pancakes. I like pancakes best on Saturday mornings with a Sixto Rodriguez record playing in the background.

If you haven't seen the documentary Searching For Sugar Man, you should. I fell in love with the story and ordered the album on vinyl from ebay. When I first listened to it I was making pancakes. Somehow now, whenever I make pancakes I want to listen to this album and whenever I happen to be listening to the album I always end up making pancakes. Even late at night. Like Pavlov's dog.


This is my favourite Saturday morning brunch. Not every week, or every month but an occasion to look forward to, when the kitchen stars align and blueberries, tempeh bacon, spelt flour and dill all happen to be together in a clean kitchen at the same time.
 

 The pancake recipe is from Vegan With A Vengeance. I like to sub in spelt flour. I like them best served with roasted potatoes (especially with chipotle powder), tempeh bacon and a large salad with romaine, slightly steamed kale, cucumber, baby tomatoes and dill dressed with my usual vinaigrette.


Maple syrup and Earth Balance (or coconut oil) too. (The maple syrup mingles with the dill in the salad in such a delicious way.)  Plus OJ and club soda in wine glasses.
 

 I really love love salad with my pancakes! That might make me weird but I do! I find it lightens up the whole meal and I can enjoy the pancakes and potatoes without feeling too heavy after.


This is my spider plant's first baby since I grew it from three babies several years ago. I was so surprised and delighted to see it! I didn't realize they had those beautiful, delicate little flowers.

  1. Wow, that looks like an incredible brunch spread; I've never thought to include salad! Aww, cute little baby spider plant! Hope you have fun at the food festival! :D
