Green Smoothies and Vegan MoFo 2015!

Vegan MoFo 2015!

I’m excited and a bit anxious, but mostly looking forward to seeing a month of inspired food posts from across the vegan world. Beautiful, yummy, colourful, plant-based food. My body gives a happy sigh.

I had plans of making breakfast cookies for this post but it didn't end up happening. Maybe later. My breakfast today isn’t that inspiring but definitely gives you a peak into my day-to-day routine. I generally work the opening shift at my job. My alarm goes off at 5am and I never really feel like eating that early in the morning so green smoothies became an obvious choice for me.

I’m still kind of asleep, even when I’m out of bed, so I needed a breakfast that would be easy and that could travel with me because I don’t leave myself a lot of time in the morning. I’m definitely a breakfast on-the-go girl (although I’d like to change my ways.) Green smoothies are quick and easy to make, nutritious and they help me to break my fast in a gentle way. I’m learning to be friends with my body and a green smoothie is a little love note to start the day.

Our local grocery store had nectarines on sale last week so I bought a lot. (Along with those new little potatoes.)

And they’re amazing.

And I’ve been eating several a day. So my smoothie this morning features them, along with banana, collard greens and spirulina. Spirulina makes me feel really grounded and satiated.

Since I start work early my “mid-day” break comes early too. At 10 o’clock this morning I knew I wasn’t ready for lunch food so instead I got a bowl of fresh oatmeal. I’m lucky enough work near a place that makes and sells a lot of nice, fresh food: Salad bar, deli salads, sandwiches, soups, fresh fruit bowl, hummus, pita chips, falafel, raw bowls, sushi, fresh juices and oatmeal.

They had a great oatmeal bar this morning so I topped my oatmeal with: blueberries, dried cranberries, slivered almonds, crushed walnuts and flax seed. It was warming and really hit the spot, even though it’s supposed to be a hot temperature week here in Toronto.

Hoping your September 1st had moments of beauty in it!
